Served tucked into pita bread and slathered with a yogurt-based sauce, kofta is a spicy meatloaf-like mixture that is traditionally shaped into logs or patties. Skewered, and grilled, kofta is vibrantly flavored, rich in spices such as cumin, coriander, and allspice.
