Quick Cook: Eggplant and tomato stew with rosemary polenta recipe

This gardener’s harvest meal will make the whole house smell of summer. Pan-fried eggplant, onion and tomato glazed with balsamic reduction ooze flavorful juices atop a pillow of creamy rosemary polenta. I like to top the whole thing with a few sprigs of fried rosemary for some extra color and aroma. The dish is equally delicious using basil in place of rosemary for both the polenta and to top the eggplant. I like the concentrated tomato flavor of dry farmed Early Girls, if you can get your hands on them. Otherwise, you can use a similar sized tomato, such as Roma.Eggplant and Tomato Stew with Rosemary PolentaServes 4INGREDIENTSFor the polenta:3½ cups seasoned vegetable broth1 cup polenta1 teaspoon finely chopped fresh rosemary¾ cup shredded ParmesanFor the eggplant and tomato stew:3 tablespoons olive oil1 red onion, thinly sliced1 very large eggplant (~ 1 ½ pounds), chopped into 1-inch cubes2 pounds tomatoes, halved and then quartered1½ teaspoons salt1 tablespoon balsamic reductionF...Lifeguard discovers body inside a plastic barrel at Malibu beach

By Jacopo Prisco | CNNYou wouldn’t know if you tasted it, but Epic OneWater Brew is a beer with a peculiar ingredient: it’s made with water recycled from the showers, sinks and washing machines of a residential building.Epic OneWater Brew is a beer made with water recycled from the showers, sinks and washing machines of a residential building.(Epic Cleantec) The beer is safe to drink, thanks to a series of treatments that include microfiltration and ultraviolet light, and it is meant to bring attention to the issue of water scarcity and reuse.“Buildings globally use 14% of all potable water,” says Aaron Tartakovsky, CEO and co-founder of Epic Cleantec, the San Francisco-based water treatment company that made the beer in collaboration with a local brewery. “Almost no buildings reuse that water — that’s what we’re trying to change.”The beer is a Kölsch-style ale — a crisp, light-bodied drink originating from Germany — and was made with recycled graywater from Fifteen Fifty, a 40...Slowing the 49ers’ bandwagon: How the 2023 season could go wrong

SANTA CLARA — Don’t book those Las Vegas reservations yet unless you’re talking about the preseason game at Allegiant Stadium against the Raiders on Aug. 13.Maybe it’s because I covered the Raiders through their 25-year return to Oakland from 1995 through 2019 and am used to seeing teams with grandiose dreams go sideways. It’s hard to fathom things going that far south for the 49ers based on their roster. But given expectations both nationally and locally, going 9-8 or sneaking in as a wild card with a one and done in the playoffs isn’t going to cut it.Some thoughts on potential hiccups that could derail a march to a sixth Lombardi Trophy on Feb. 11 in Sin City after observing the first four non-contact practices as well as Monday’s first padded session at the club facility:No injuries yet — that will changeI can’t remember the last time the 49ers looked this healthy. Players who had trouble staying on the field last season (defen...Sideshow dilemma continues to rankle many motorists: Roadshow

Q: I live in Sacramento, but indulge myself by subscribing to your newspaper online. I used to live in the South Bay and have family living in the East Bay, so I enjoy keeping current on news there and the “Roadshow” and Joan Morris columns.I am especially interested in the ongoing debate about sideshows and their cultural significance versus the danger they present to participants and bystanders. We have recently had a spate of them here and there have been some serious injuries involved. If it is a cultural event that people want to see and be a part of, and a city mayor sees it as that, as in Richmond, maybe there’s a way to find a place large enough for sideshows to take place within that city. If it’s leased land, make the payment very affordable. They can organize their own shows. Maybe there could be bleachers. Since the land is leased from the city, local gun laws and drug use laws would have to be a part of that lease. It would get people and these shows off of the public st...Map: Mosquito spraying in San Jose, Milpitas after West Nile discovery

CAPE CANAVERAL, Fla. (AP) — After days of silence, NASA has heard from Voyager 2 in interstellar space billions of miles away. Flight controllers accidently sent a wrong command nearly two weeks ago that tilted the spacecraft’s antenna away from Earth and severed contact.NASA’s Deep Space Network, giant radio antennas across the globe, picked up a “heartbeat signal,” meaning the 46-year-old craft is alive and operating, project manager Suzanne Dodd said in an email Tuesday. The news “buoyed our spirits,” Dodd said. Flight controllers at the Jet Propulsion Laboratory in California will now try to turn Voyager 2’s antenna back toward Earth. If the command doesn’t work — and controllers doubt it will — they’ll have to wait until October for an automatic spacecraft reset. The antenna is only 2% off-kilter.“That is a long time to wait, so we’ll try sending up commands several times” before then, Dodd said. Voyager 2 rocketed into space in 1977, along with its iden...Latest news
